Chicken Noodle Soup

My family knows that I am a sucker for a brothy soupā€¦there is something about sipping on broth that brings me so much comfort and it feels good to my body!

I know I am not the only one, but I might be a minority on that one šŸ¤£

So, about this soup: It will feed a crowd, it is incredibly fresh, yet also rich and comforting. It is perfect for a cold winter day or those all- too-often sick days that come with the colder months.

Whether you are making this because you are well or because you are sick, it will only bring you joy!

CHICKEN NOODLE SOUP

Ingredients:

1 8-10lb organic chicken, with giblets removed

1 yellow onion, halved

3-4 stalks celery, diced

4 carrots wash with the skin on, diced

2 bay leaves

2 lemons, halved

I bundle of dill

1 bundle of parsley

1 bundle thyme

1 tablespoon kosher salt

1/2 tablespoon black pepper

2 tablespoons of unsalted butter

1 12 oz bag of Reames Egg Noodles. If you like a lot of noodles, opt for the 24 oz bag!

Extra fresh herbs for topping

Instructions:

In a large stock pot, place chicken, celery, onion, bay leaves, lemon, salt and pepper. Tie together with kitchen string your bundle of dill, thyme and parsley. Place it in with the chicken.

Cover chicken with water until ingredients are submerged and there is about 2-3 inches of water covering the top.

Cover with lid and let simmer on low heat until chicken is falling apart. No less than 2 hours. Up to 6 hours!

Once your chicken is ready, remove chicken and set aside to cool. Shred chicken once cool enough to handle!

If you are wanting a clear, veggie free broth, strain your broth in a colander.

*Or, you can choose to discard the onion, lemon, and bay leaves, keeping the celery and aromatics apart of your broth*. This is what I usually do!

After straining, bring broth to a boil, and add in carrots. Let cook until just tender. About 15 minutes. Add in egg noodles and cook according to package instructions.

Finally, add in your pulled chicken. Top the soup with the juice of one lemon, fresh herbs and a dab of butter.
